Ingredients

  • 1 Freshly Shucked Oyster (retaining as much natural "liquor" as possible)

  • 1–2 tbsp Chef Kaz Tomato Ponzu

  • Optional Toppings: A pinch of chopped chives, a slice of lemon, a small dollop of wasabi, or a few grains of tobiko (flying fish roe) for a pop of texture.


Instructions

  1. The Vessel: Place one freshly shucked oyster into a chilled "fancy" glass or a traditional tall shot glass.

  2. The Infusion: Pour Chef Kaz Tomato Ponzu over the oyster until it is just submerged. The acidity of the ponzu will slightly "awaken" the flavor of the brine.

  3. The Garnish: Add your optional toppings.
