Ingredients:
For the Salad:
- 8 oz soba noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup red cabbage, thinly sliced
- 2 green onions, chopped
- 1/4 cup edamame, shelled (optional)
- 1/4 cup fresh cilantro, chopped
- 1 tbsp sesame seeds (for garnish)
For the Dressing:
- 1/4 cup Japanese Ginger Dressing (Chef Kaz's)
Optional Add-ons:
- 1 avocado, sliced (for extra creaminess)
- Toasted nori strips (for a Japanese twist)
Directions:

Cook the soba noodles: Bring a pot of water to a boil and cook the soba noodles according to the package instructions (usually about 4-5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the veggies: While the noodles are cooking, julienne the cucumber, carrot, red bell pepper, and red cabbage. Set aside.

Assemble the salad: In a large bowl, combine the cooled soba noodles with the prepared veggies, green onions, and edamame (if using). Toss gently to mix.

Drizzle with Japanese Ginger Dressing: Add our Japanese Ginger Dressing to the soba noodle salad and toss until everything is evenly coated.

Garnish and serve: Top the salad with fresh cilantro, sesame seeds, and any optional add-ons like avocado or toasted nori strips.
